Sasà Martucci tells of its origins, in a Caserta where pizza began a journey made up of stories and recipes handed down from generation to generation within families. A recipe that today expresses the energy of the territory and its producers by an idea of a pizzeria that looks to the future.
The Interview with Sasá Martucci
Our saying “The Oil Born Earth in good hands” takes us to Sasà Martucci. His family is synonymous with pizza and Caserta in the world. For some time Sasà has been bringing a new idea of pizza forward, together with his tasty creations it travels to the territory, its history and that of the producers of the companies it collaborates with.
Raffaele Carotenuto of Nata Terra together with Antonella Mignacca of Into the Food, who looks after the communication of Nata Terra, went to visit him in an informal chat where they shared future projects and visions.
Sasà Martucci and Nata Terra Oil
The Nata Terra oil mill, a social agriculture project of the Osiride social cooperative, and its organic extra virgin olive oil has long been pleased to be part of the ingredients selected by Sasà. Some of the pizzas of I Masanielli have been designed to blend perfectly with the aromas and flavors of Nata Terra oils. In the interview, Sasà tells us what is the path that his pizza has done in order to take care of each ingredient in detail, including extra virgin olive oil. Oil is too often an underestimated ingredient, which cannot be seen, but capable of enhancing what
pizza is able to give us.
We are not the only Social Cooperative with which Sasà collaborates, for some time now it has also had a pizza with Teano chickpeas, a Slow Food presidium, on its menu. This legume is a product of the La Strada social cooperative which works on the Antonio Landieri confiscated property in Teano (Ce) and to which we are very attached.
The List of Oils Used in the Pizza of I Masanielli
The intense fruity extra virgin olive oil Nata Terra Slow Food Presidium monocultivar Sessana will be present in the oil list of the I Masanielli pizzeria in Caserta. A long selection work has been done, the most prestigious and representative companies of the Campania region will best express the territory in the pizzas of Sasà.
Sasà organized a meeting which took place recently at the Caserta pizzeria. A day dedicated to tasting and comparing the world of pizza and that of extra virgin olive oil. The importance of networking between producers, restaurateurs, institutions and the mass media was discussed to give the right value to a sector
with enormous potential. We are pleased to be in good company on the oil menu of the Sasà pizzeria with Ragozzino De Marco, Azienda Olivicola Petrazzuoli, Olio Koinè, Terre di Molinara, Frantoio De Ruosi and Frantoio Porto di Mola.
